We have shared this recipe on our Instagram, but we wanted it here as well! I found this recipe on The Detoxinista and I fell in love. It features the awesome chia seed and it satisfies my sweet tooth. I adapted a few things from the original: I changed almond milk to coconut milk. You can use either! I also do not blend these together using a blender, I just simply stir. I typically do not cool it over night (just depends on if I want it for breakfast). I just cool it until it forms a pudding texture to my liking.
- 1 cup coconut milk
- 3 tablespoons chia seeds
- 1 teaspoon vanilla
- 1 tablespoon maple syrup
- Stir all ingredients together, seal container, and sit in refrigerator until pudding forms.
